Apple Nut Pancakes

I made these for supper tonight. They are from Food To Live By.

2 crisp apples, cored, peeled and thinly sliced
1/2 c toasted pecans or walnuts, coarsely chopped
2 large eggs
1 c milk or buttermilk
4 T melted butter or 4 T canola oil
2 c less 2 T whole wheat pastry flour
2 T sugar
1/2 t salt
1 1/2 t baking powder
1 T cinnamon

Mix eggs, milk and butter. Mix dry ingredients together and mix with wet ingredients until moistened. Spoon batter onto hot griddle to form 4-inch pancakes. Arrange apples and walnuts over batter. When small bubbles begin to appear, flip pancakes and cook until the other side is brown. Serve with warmed maple syrup.
